In una ciotola, mescola l'acqua tiepida con il lievito e lascia riposare per 5 minuti.

Aggiungi la farina di mandorle, le proteine in polvere, l'uovo, lo yogurt, il sale e l'olio, quindi impasta fino a ottenere un composto omogeneo.

Lascia riposare l'impasto per 20 minuti.

Nel frattempo, in una padella, scalda l'olio e rosola il cipollotto tritato. Aggiungi gli spinaci e cuoci per alcuni minuti, poi condisci con sale, pepe e succo di limone.

Dividi l'impasto in 3 porzioni, stendile sottilmente e farciscile con il ripieno di spinaci.

Chiudi i fatayer a triangolo, spennellali con l'uovo rimasto e cospargili di semi di sesamo.

Cuoci in forno a 180°C per 20 minuti fino a doratura.
