Method

In una ciotola, unire la farina di mandorle, la farina d'avena, l'uovo, lo yogurt greco, il sale e l'olio EVO. Mescolare fino a ottenere un impasto omogeneo e farlo riposare per 5 minuti.

In una padella, scaldare un filo d'olio e soffriggere la cipolla e l'aglio per 2 minuti. Aggiungere gli spinaci e il succo di limone, cuocendo per altri 2 minuti. Unire il basilico e la menta, aggiustando di sale.

Stendere l'impasto tra due fogli di carta forno fino a formare un disco sottile di circa 15 cm di diametro.

Mettere il ripieno al centro del disco, piegare i lati per formare un triangolo e creare un piccolo foro al centro.

Cuocere in forno preriscaldato a 200°C per 15 minuti, fino a doratura.

Lasciare raffreddare per 2 minuti, poi servire caldo.
