Cuocere la quinoa in acqua salata seguendo le istruzioni sulla confezione, poi scolarla.

Nel frattempo, cuocere il finocchio in acqua bollente per circa 10 minuti fino a che non diventa tenero.

Scolare il finocchio, svuotarlo delicatamente al centro e tritare la parte centrale.

In una padella, riscaldare l'olio e rosolare il pollo macinato. Aggiungere il finocchio tritato, sale, pepe e prezzemolo, mescolando bene.

Unire la quinoa cotta e il parmigiano, mescolando fino a ottenere un composto omogeneo.

Riempire il finocchio con il ripieno preparato e sistemarlo in una pirofila.

Cuocere in forno a 180°C per 20 minuti.
