Pulire il filetto di branzino e asciugarlo con carta assorbente; tagliarlo in 4 rettangoli di spessore uniforme.

Tritare finemente le olive nere, i capperi, l'aglio e il limone (solo la polpa, precedentemente pelato). Mescolare con l'origano, una presa di sale e pepe.

In una ciotola, sbattere l'uovo e mescolarvi il composto di olive e capperi, aggiungendo il pangrattato integrale fino a ottenere un impasto coeso.

Preparare le verdure: lavare e tagliare la zucchina a bastoncini, la carota a stecchini sottili, il peperone a strisce larghe.

Disporre i bastoncini di filetto di branzino su una carta forno oleata, spalmare leggermente ciascuno con il composto di olive e pangrattato, quindi pressare delicatamente.

Cuocere i filetti in forno a 200°C per 12-14 minuti fino a cottura al dente.

Nello stesso tempo, disporre le verdure su una piastra riscaldata o una griglia, condire con 10 ml di olio extravergine, sale e pepe; cuocere per 8-10 minuti girandole a metà cottura fino a ottenere una leggera doratura.

Tostare leggermente i panini integrali in forno o in tostapane per 2 minuti.

Assemblare il burger: spalmare il panino con una goccia d'olio, posizionare il filetto cotto, aggiungere un cucchiaio di verdure grigliate e una spolverata di aneto fresco.
