Method

Precaldare il forno a 180°C. Spruzzare 4 pirottini (da 150 ml ciascuno) con olio di cocco e posizionarli in una teglia.

In una padella antiaderente, rosolare le zucchine tagliate a cubetti con aglio e un filo d'olio per 5-6 minuti, fino a renderle leggermente appassite; salare e pepare.

Trasferire le zucchine in una ciotola e lasciar raffreddare per 2 minuti.

Aggiungere alla ricotta l'uovo intero, gli albumi e il latte di mandorla; mescolare fino a ottenere un composto liscio e omogeneo.

Incorporare delicatamente le zucchine, il Parmigiano Reggiano grattugiato e la menta tritata; mescolare con cura.

Distribuire il composto equamente nei 4 pirottini, riempiendo fino a 1 cm dal bordo.

Posizionare i pirottini in una teglia fonda, riempire con acqua calda fino a metà altezza (bagnomaria) e coprire il tutto con carta stagnola.

Cuocere in forno a 180°C per 22-25 minuti, finché il flan risulta leggermente tremolante al centro ma solido ai lati.

Estrarre dal forno, lasciare riposare 3 minuti, quindi sformare delicatamente su piatti e servire tiepido o a temperatura ambiente.
