Tritare finemente le mandorle e mescolarle con l'uovo, la farina di mandorle, lo yogurt greco, l'eritritolo, il lievito e il sale. Riporre l'impasto in frigo per 30 minuti.

In un pentolino, unire eritritolo, crema di cocco, aceto di mele e acqua; cuocere a fuoco lento mescolando fino ad ottenere una crema caramellata densa.

Stendere l'impasto su carta forno fino a 1 cm di spessore e ricavare un disco di circa 6 cm. Cuocere in forno preriscaldato a 180°C per 8-10 minuti.

Montare l'acquafaba con eritritolo fino a ottenere una consistenza di meringa.

Sciogliere il cioccolato fondente e glassare il biscotto, quindi aggiungere la meringa e far raffreddare per 15 minuti.
