In una ciotola, unire l'albume d'uovo, l'acqua tiepida e il lievito istantaneo, mescolando bene e lasciando riposare per 5 minuti.

Aggiungere la farina di avena, le proteine in polvere e il sale. Mescolare fino a ottenere un impasto omogeneo.

Versare l'impasto in una teglia antiaderente di 20x20 cm e stenderlo delicatamente con le dita umide, creando la tipica superficie a fossette.
