Sciogliere il lievito in 50 ml di acqua tiepida con un pizzico di sale e attendere 10 minuti.

In una ciotola grande, mescolare farina integrale, yogurt greco, il lievito attivato e i restanti 80 ml di acqua.

Impastare vigorosamente per 8-10 minuti fino a ottenere un composto omogeneo e elastico.

Aggiungere 4 g di olio e continuare a impastare per 2 minuti.

Trasferire l'impasto in una ciotola leggermente unta, coprire con pellicola e lasciar lievitare 90 minuti a temperatura ambiente fino al raddoppio del volume.

Nel frattempo, pelare le patate dolci, tagliarle a fette sottili (3-4 mm) e asciugarle con carta da cucina.

Preriscaldare il forno a 200°C.

Stendere l'impasto lievitato su una teglia rotonda unta (28 cm di diametro), premendo delicatamente con i polpastrelli fino a coprire tutta la superficie.

Disporre le fette di patata dolce in modo ordinato e sovrapposto, partendo dal bordo verso il centro.

Cospargere con sale, pepe, aghi di rosmarino fresco e 12 g di Parmigiano reggiano grattugiato.

Cuocere in forno a 200°C per 25-28 minuti fino a doratura della superficie e punta di coltello che attraversa le patate.
