Method

Foderare una placca da forno (35x25 cm) con carta forno.

Frullare gli spinaci freschi con 150 ml di acqua fino a ottenere un composto omogeneo e denso.

In una ciotola grande, versare la farina di farro integrale, aggiungere il composto di spinaci, il lievito sbriciolato, il sale e lo zucchero.

Aggiungere i restanti 50 ml di acqua tiepida e 10 ml di olio extravergine di oliva, quindi mescolare energicamente per 8-10 minuti fino a formare un impasto coeso e leggermente appiccicaticcio.

Trasferire l'impasto sulla placca preparata e distribuirlo uniformemente con le mani leggermente inumidite, creando uno strato di circa 1 cm di spessore.

Lasciare riposare l'impasto a temperatura ambiente per 15 minuti.

Nel frattempo, affettare finemente le olive verdi.

Inumidire leggermente la superficie dell'impasto con uno spruzzetto di acqua, quindi irrorare con i rimanenti 10 ml di olio extravergine di oliva.

Distribuire uniformemente le fettine di olive sulla superficie, cospargere il rosmarino tritato e il sale grosso.

Con le dita leggermente umide, affondare la punta sulla superficie creando i caratteristici buchi della focaccia.

Cuocere in forno preriscaldato a 200°C per 30-35 minuti fino a doratura dorata.

Estrarre dal forno e servire ancora tiepida, tagliata a porzioni.
