Sciogliere il lievito in 50 ml di acqua tiepida con un pizzico di zucchero e attendere 5 minuti fino a che non risulti schiumoso.

In una ciotola grande, mescolare farina integrale, proteine in polvere, curcuma e sale.

Aggiungere il lievito attivato, l'acqua restante e 10 ml di olio; impastare energicamente per 8-10 minuti fino a ottenere un impasto omogeneo ed elastico.

Trasferire su un piano di lavoro leggermente infarinato e formare una palla; posizionare in una ciotola unta, coprire con un canovaccio umido e far lievitare 90 minuti a temperatura ambiente fino al raddoppio del volume.

Dividere l'impasto in 12 porzioni uguali; formare palline e appiattirle delicatamente con le mani fino a uno spessore di circa 1.5 cm.

Disporre le focaccine su una teglia rivestita di carta forno, spennellare leggermente con il restante olio e cospargere generosamente con semi di girasole e semi di lino.

Coprire con un canovaccio e far lievitare ulteriormente 45 minuti.

Preriscaldare il forno a 200°C (ventilato).

Cuocere in forno caldo per 22-25 minuti fino a doratura uniforme della superficie.

Togliere dal forno e far raffreddare su una gratella per almeno 10 minuti prima di servire.
