Prepara la pasta frolla: in una ciotola, mescola la farina integrale con un pizzico di sale. Aggiungi il burro chiarificato a pezzetti e sbriciolalo con le dita fino a ottenere un composto sabbioso. Incorpora l'albume e l'eritritolo, quindi grattugia la scorza di limone. Impasta leggermente fino a formare un panetto liscio, avvolgilo in pellicola e riponi in frigorifero per 30 minuti.

Preriscalda il forno a 180°C. Stendi la pasta frolla tra due fogli di carta forno fino a 2-3 mm di spessore.

Ricava dischi da 4 cm di diametro e posizionali in mini stampi per crostatine (o su una teglia rivestita di carta forno). Bucherella la base con una forchetta.

Cuoci per 20-25 minuti fino a doratura leggera. Lascia raffreddare completamente.

Monta la panna vegetale con le fruste elettriche fino a raggiungere una consistenza soffice (circa 2-3 minuti).

Sbriciola due mini crostatine in una ciotola. Frulla il latte scremato con il gelato proteico e le briciole di crostata per 20-30 secondi fino a ottenere un frappè cremoso.

Decora con la panna vegetale montata usando una tasca da pasticceria. Cospargere di cacao, aggiungere mandorle affettate e un cucchiaio di confettura. Servi immediatamente.
