Preparare la base: in una ciotola, mescolare farina integrale, mandorle tritate, sale ed eritritolo. Aggiungere il burro ammorbidito e l'uovo intero, impastare velocemente fino a ottenere un composto sabbioso. Formare un disco, avvolgerlo in pellicola e riporre in frigorifero per 20 minuti.

Nel frattempo, preparare la crema: in una ciotola capiente, montare ricotta scremata e yogurt greco con una frusta elettrica per 2 minuti, aggiungendo il succo e la scorza di limone fresco. Incorporare delicatamente le proteine in polvere setaciate, il miele e l'albume montato a neve morbida.

Stendere l'impasto tra due fogli di carta forno fino a uno spessore di 4 mm. Trasferire in una teglia da crostata da 24 cm precedentemente unta leggermente d'olio. Bucherellare la base con una forchetta e riporre in frigorifero per 15 minuti.

Preriscaldare il forno a 180°C. Cuocere la base per 20-25 minuti fino a doratura leggera. Lasciar raffreddare completamente su una gratella (almeno 30 minuti).

Distribuire la crema ricotta in modo uniforme sulla base fredda e livellare la superficie con una spatola.

Pulire e asciugare fragole, pesche e kiwi. Affettare le pesche in fette sottili, i kiwi in semicerchi e lasciare le fragole intere o tagliate a metà se grandi.

Disporre la frutta sulla crema in modo decorativo: alternare file di fragole, pesche e kiwi creando un effetto colorato e ordinato.

Cospargere con pistacchio tritato e servire a temperatura ambiente o leggermente fredda. Conservare in frigorifero fino a 24 ore.
