Tagliare la zucchina a rondelle sottili e farle rosolare in una padella con 2 g di olio extravergine d'oliva per circa 5 minuti a fuoco medio. Aggiungere sale e pepe a piacere.

In una ciotola, sbattere i 2 albumi con la ricotta light e il prezzemolo tritato fino a ottenere un composto omogeneo.
