Cuoci il riso integrale secondo le istruzioni della confezione, poi lascialo raffreddare completamente.

In una ciotola, unisci la ricotta magra, gli albumi d'uovo e il Parmigiano Reggiano; mescola fino a ottenere un composto omogeneo.

Aggiungi l'erba cipollina tritata, la farina integrale, sale e pepe; amalgama bene.

Incorpora il riso integrale raffreddato e mescola delicatamente finché tutti gli ingredienti sono distribuiti uniformemente. Se il composto risulta troppo umido, aggiungi un cucchiaio di farina integrale in più.

Preriscalda il forno a 200°C e rivesti due vassoi con carta da forno.
