Method

Sbucciare e tagliare la zucca a cubetti, lessarla in acqua leggermente salata per 12 minuti fino a renderla morbida e scolarla bene.

Trasferire la zucca cotta in una ciotola e schiacciarla con una forchetta fino a ottenere una consistenza cremosa.

In una ciotola separata, montare leggermente gli albumi d'uovo con una forchetta, quindi unirli alla zucca schiacciata.

Aggiungere le proteine di soia isolate, la farina integrale, il lievito istantaneo, il sale e il pepe, mescolando bene fino a ottenere un impasto omogeneo e denso.

Coprire l'impasto e lasciarlo riposare a temperatura ambiente per 20 minuti per permettere al lievito di agire.

Preriscaldare il forno a 190°C. Disporre una carta forno su una teglia.
