Inizia cuocendo i ceci in acqua per 2 ore, quindi scolali e lasciali raffreddare.

Frulla il riso integrale in un mixer fino a ottenere una farina fine.

In una ciotola, unisci la farina di riso, i ceci cotti e frullati, la farina di cocco, gli albumi, lo yogurt, l'eritritolo, il sale e la cannella.

Mescola bene fino a formare un impasto omogeneo.
