Method

In un mixer potente, frulla la scorza dei tre limoni con l'eritritolo per 30 secondi fino ad ottenere una miscela fine e profumata; raschia i bordi e ripeti per altri 15 secondi.

Aggiungi il latte scremato, lo yogurt greco e gli albumi d'uovo nel mixer e frulla a velocità media per 45 secondi fino a amalgamare completamente.

Versa il composto in una pentola antiaderente e scalda a fuoco medio per 8-10 minuti, mescolando costantemente con una frusta, finché raggiunge 75-80°C (deve risultare caldo ma non bollente); non portare a ebollizione.

Togli dal fuoco e aggiungi le proteine in polvere e il succo di limone freschi, mescolando energicamente con la frusta fino a eliminare ogni grumo.

Lascia raffreddare il composto a temperatura ambiente per circa 20-25 minuti, poi trasferiscilo in una teglia bassa in alluminio, copri e riponi in congelatore per almeno 12 ore.

Al momento di servire, taglia il gelato congelato a pezzi di 3x3 cm, trasferiscili nel mixer e frulla a velocità media per 25-30 secondi, mescolando bene con una spatola tra gli impulsi di frullatura, finché ottieni una consistenza cremosa e mantecata.
