Preriscalda il forno a 200°C. Rivesti una teglia con carta da forno e disponi i peperoni dolci tagliati a metà con la parte interna rivolta verso il basso.

Cuoci in forno per circa 20 minuti, finché la pelle dei peperoni non sarà abbrustolita. Rimuovili dal forno e coprili con un canovaccio per farli riposare.

Nel frattempo, in una pentola, scalda l'olio a fuoco medio. Aggiungi la cipolla tritata e l'aglio, soffriggendo fino a doratura.

Aggiungi il riso e tostalo per 2-3 minuti, mescolando frequentemente.

Una volta che i peperoni si sono raffreddati, rimuovi la pelle e frullali con il brodo vegetale, curcuma, pepe e sale fino a ottenere una crema liscia.

Versa la crema di peperoni nella pentola con il riso, mescola bene e porta a ebollizione.

Copri, abbassa la fiamma e cuoci per circa 20 minuti, fino a quando il riso è tenero e il liquido è assorbito.
