Method

Triturare finemente la cipolla e strizzarla bene in uno strofinaccio per eliminare i liquidi.

Combinare in una ciotola la carne macinata mista (manzo e agnello), la cipolla, l'aglio tritato, sale, origano, timo, rosmarino, cumino e pepe; impastare fino a ottenere un composto appiccicaticcio.

Formare un polpettone compatto, pressarlo in una piccola teglia (o modellarlo a mano) e cuocere in forno a 160°C per 12-15 minuti finché non raggiunge i 65°C al termometro.

Lasciar raffreddare leggermente, quindi affettare in fettine sottili (2-3 mm).

Rosolare in padella con mezzo cucchiaio d'olio a fuoco medio-alto per 3-4 minuti totali, mescolando frequentemente, fino a doratura leggera.
