In una ciotola, mescolare l'acqua tiepida con il miele e aggiungere il lievito. Coprire e lasciare riposare per circa 10 minuti, fino a quando non si forma una schiuma.

In un'altra ciotola, unire le farine di grano saraceno e avena con il sale. Aggiungere il composto di lievito e mescolare fino a formare un impasto.

Trasferire l'impasto su una superficie infarinata e lavorarlo per circa 5 minuti fino a renderlo liscio.

Ungere una ciotola con l'olio d'oliva e posizionare l'impasto all'interno, coprendo con un panno. Lasciare lievitare fino al raddoppio, circa 30 minuti.

Sgonfiare l'impasto e dividerlo in 9 porzioni. Formare delle palline e disporle su una teglia rivestita di carta forno.

Coprire le palline con un panno umido e lasciare lievitare per altri 20 minuti.

Preriscaldare il forno a 180°C e cuocere il pane per 20 minuti, fino a doratura.
