Method

Versare l'acqua tiepida in una ciotola capiente e sciogliervi il lievito di birra fresco, mescolando delicatamente per 1 minuto fino a completa dissoluzione.

In una ciotola separata, unire la farina di Kamut®, l'isolato proteico, il sale marino e i semi di lino macinati, mescolando bene con una frusta per distribuire uniformemente le proteine.

Versare il lievito sciolto sulla miscela di farina e iniziare a impastare con le mani, aggiungendo gradualmente l'olio extravergine di oliva durante l'impasto.

Continuare a impastare per circa 10-12 minuti fino a ottenere un impasto liscio, elastico e poco appiccicaticcio: l'impasto deve risultare omogeneo e coeso.

Compattare l'impasto in una palla liscia, trasferirlo in una ciotola leggermente unta di olio e coprire con un panno umido o pellicola alimentare.

Lasciare fermentare a temperatura ambiente (circa 22-24°C) per 2 ore, oppure in luogo tiepido a 28-30°C per 1 ora e 30 minuti, fino a quando l'impasto raddoppia di volume.

L'impasto è pronto per essere steso e utilizzato per preparare pizze fit o focacce proteiche secondo il proprio gusto.
