In un pentolino, porta a ebollizione 120 ml di acqua con 20 g di eritritolo, mescolando fino a ottenere uno sciroppo leggero in circa 3-4 minuti.

In una padella antiaderente, sciogli 10 g di olio di cocco a fuoco medio-basso e aggiungi 30 g di farina di mandorle e 20 g di proteine in polvere alla vaniglia; tosta mescolando costantemente per 6-8 minuti fino a doratura.

Versa lentamente lo sciroppo caldo sulla miscela di farina di mandorle e mescola bene per 2-3 minuti a fuoco basso fino a ottenere un composto omogeneo.

Aggiungi 15 g di nocciole tritate, mescola e copri, lasciando riposare per 2 minuti.

Trasferisci in un piattino e lascia raffreddare per 5 minuti prima di gustare.
