Method

Preparare il caramello: mescolare 15g di eritritolo con 30ml di acqua in un piccolo tegame. Portare a ebollizione senza mescolare, far caramellizzare 5-6 minuti fino a color nocciola scuro, quindi versare rapidamente in un ramequin da 150ml, inclinando per coprire il fondo.

Preparare la crema: in una ciotola mescolare delicatamente 2 uova intere, 100ml di latte evaporato light, 40ml di latte condensato light, 1 tuorlo aggiunto, 2ml di estratto di vaniglia senza zucchero, filtrare per eliminare le bolle.

Versare la crema nel ramequin caramellato.

Posizionare il ramequin in una teglia con acqua calda fino a metà altezza (bagnomaria).

Infornare a 170°C per 20-25 minuti fino a quando la superficie è appena ferma ma il centro rimane leggermente tremolante.

Raffreddare completamente, coprire e refrigerare almeno 4 ore. Capovolgere su un piattino per il servizio.
