Lavare i limoni sotto acqua corrente fredda e asciugarli bene con un canovaccio pulito.

Tagliare i limoni a fette sottili (circa 3 mm), eliminando i semi visibili.

In un barattolo di vetro sterilizzato da 500 ml, distribuire un primo strato di fette di limone.

Cospargere uniformemente con un pizzico di sale marino integrale.

Aggiungere alcuni grani di pepe nero, pepe rosa e una foglia di alloro.

Proseguire alternando strati di limone, sale e spezie fino a riempire il barattolo.

Chiudere ermeticamente il barattolo e posizionarlo a temperatura ambiente (18-22°C).

Capovolgere delicatamente il barattolo ogni mattina per 3 giorni, permettendo ai liquidi di distribuirsi uniformemente.

Dopo 3 giorni, trasferire in frigorifero a 4°C dove la fermentazione continuerà lentamente.

Attendere 2-3 settimane: la scorza diventerà progressivamente più morbida e il sapore più profondo e complesso.
