Mescolare 25g di farina di mandorle, 10g di farina d'avena, 5g di eritritolo, un pizzico di cannella e chiodi di garofano.

Aggiungere 8g di olio EVO e 1 tuorlo d'uovo, impastare velocemente fino a formare un composto omogeneo e refrigerare 30 minuti.

Preriscaldare il forno a 175°C. Stendere 2/3 dell'impasto in uno stampo monoporzione (8cm di diametro), distribuire 15g di confettura di ribes senza zucchero.

Formare sottili strisce con il restante impasto e disporle a griglia sulla confettura.

Spennellare il tuorlo d'uovo rimanente sulla griglia e infornare per 15-18 minuti fino a doratura.

Raffreddare completamente prima di servire.
