Prepara lo za'atar mescolando in una ciotola timo, origano, sommacco, cumino e sale. Aggiungi i semi di sesamo e mescola bene. Conserva in un contenitore.

In una ciotola grande, unisci farina semi-integrale, proteine in polvere, sale e lievito. Versa l'acqua tiepida e l'olio, impasta per 8 minuti fino a ottenere un impasto omogeneo ed elastico.

Forma una palla, poni in una ciotola unta d'olio, copri con un canovaccio umido e lascia lievitare 90 minuti in luogo caldo finché raddoppi.

Trita grossolanamente le olive. Schiaccia la ricotta light in una ciotola con un pizzico di sale e pepe.

Dividi l'impasto in 4 parti. Stendi ogni pezzo a mano o con un mattarello fino a formare dischetti di circa 20 cm di diametro e trasferiscili su una placca rivestita di carta forno.

Su due dischetti spalma ricotta light, distribuisci pomodori ciliegini tagliati a metà e cospargili di za'atar. Sui restanti due, distribuisci olive tritate, latticini light spezzettati e ancora za'atar. Spruzza tutto con pochissimo olio.

Lascia riposare 10 minuti. Intanto preriscalda il forno a 200°C.

Cuoci per 14-15 minuti fino a quando i bordi sono dorati e la base è croccante. Sforna e servi subito.
