Grattugia il pecorino romano e dividi in due parti uguali da 20 g ciascuna.

Trita finemente il pane integrale raffermo fino a ottenere una pangrattata grossolana.

In una ciotola, sbatti le 4 uova con un pizzico di sale e pepe.

Aggiungi il prezzemolo tritato, la maggiorana e metà del pecorino grattugiato (20 g) alle uova.

Incorpora la pangrattata e mescola bene fino a ottenere un composto omogeneo.

Versa il composto in uno stampo rettangolare antiaderente leggermente umidificato, livella la superficie.

Cuoci a bagnomaria (vassoi sovrapposti a vapore) per 18-20 minuti fino a che la frittata sia assestata ma ancora morbida.

Estrai lo stampo con cautela, trasferisci la frittata su un tagliere e taglia in cubetti di circa 0.8 cm.

Porta il brodo vegetale a ebollizione in una pentola.
