Preriscalda il forno a 180°C. Rivesti una teglia da 20x30 cm con carta da forno.

In una padella grande, rosola il pollo macinato e la cipolla rossa tritata a fuoco medio-alto per circa 7-8 minuti, finché il pollo è ben cotto.

Aggiungi i pomodori pelati, i fagioli neri, il mais e i peperoni verdi. Condisci con paprika, cumino e pepe. Cuoci a fuoco basso per 5 minuti.

Distribuisci un terzo del composto di pollo sul fondo della teglia. Copri con due tortillas, sovrapponendole leggermente.

Aggiungi un altro terzo del composto di pollo e spolvera con metà del formaggio grattugiato.
