In una ciotola, mescolare la farina integrale con lo yogurt greco, l'acqua e l'olio extravergine di oliva. Impastare fino ad ottenere un composto omogeneo e liscio. Lasciare riposare per 15 minuti.

Nel frattempo, cuocere il petto di pollo in una padella antiaderente, aggiustando di sale e pepe. Una volta cotto, tritare finemente il pollo e mescolarlo con la ricotta, aggiungendo noce moscata a piacere.

Stendere l'impasto su un piano di lavoro infarinato fino a ottenere una sfoglia sottile. Ricavare dei dischi con un coppapasta di circa 10 cm di diametro.

Farcire ogni disco con un cucchiaio di ripieno di pollo e ricotta, quindi ripiegare a mezzaluna e sigillare bene i bordi.

Scaldare una padella antiaderente e cuocere le mezzelune per 3-4 minuti per lato, fino a doratura. Servire calde, eventualmente accompagnate da una salsa di pomodoro fresco.
