Cuocere il polpo in acqua bollente per circa 30 minuti fino a renderlo tenero, poi lasciarlo raffreddare e tagliarlo a cubetti.

Affettare finemente il cavolfiore crudo con un coltello affilato.

Cuocere a vapore il cavolfiore per 5 minuti, in modo che resti croccante.

Preparare la salsa mescolando in una ciotola il polpo tagliato, 2 pomodorini secchi tritati, un cucchiaio di capperi dissalati e 5g di olio extravergine d'oliva, aggiungendo succo di limone a piacere.

Alternare strati di cavolfiore e salsa di polpo in un piatto, completando con una spolverata di pepe nero e prezzemolo fresco tritato.
