Sbuccia le castagne fresche rimuovendo sia il guscio esterno che la pellicina interna (oppure usa castagne congelate già pelate per praticità).

In una pentola antiaderente, scalda l'olio e rosola la cipolla affettata finemente e l'aglio tritato per 2-3 minuti a fuoco medio.

Aggiungi le castagne tagliate a pezzi e versa il brodo vegetale caldo.

Porta a ebollizione e cuoci a fuoco medio per 15 minuti finché le castagne non diventano molto tenere.

Unisci il riso integrale mescolando bene e continua la cottura per altri 15-18 minuti, girandolo di tanto in tanto fino a quando il riso raggiunge la giusta consistenza e le castagne si disgregano parzialmente.

Versa il latte scremato e il latte di mandorla, mescolando con cura.

Scalda per 2-3 minuti senza far bollire, regolando di sale, pepe e noce moscata.

Trasferisci in una pentola a immersione (frullatore a mano) e frulla fino a raggiungere una consistenza vellutata ma con piccoli pezzi di castagna visibili per una migliore esperienza sensoriale.
