In una ciotola, mescolare la farina integrale, il lievito e il sale. Aggiungere lo yogurt greco e il burro di cocco fuso, quindi versare l'acqua fredda poco per volta fino a ottenere un impasto omogeneo.

Trasferire l'impasto su una superficie infarinata e impastare per circa 5 minuti fino a renderlo elastico. Formare una palla, avvolgerla nella pellicola trasparente e farla riposare in frigorifero per 20 minuti.

Preriscaldare il forno a 200°C. Rivestire una teglia con carta forno.

Stendere l'impasto in un cerchio di circa 5 mm di spessore. Tagliare il cerchio in 16 spicchi utilizzando una rotella.

Su ogni spicchio, posizionare una fetta di tacchino affumicato e arrotolare partendo dalla base fino alla punta, formando il croissant.
