Method

Affettare sottilmente la melanzana e la zucchina. Cospargere la melanzana con un pizzico di sale e farla riposare per 15 minuti per eliminare l'acqua in eccesso. Risciacquarla e asciugarla.

In una padella antiaderente, scaldare 1 cucchiaio di olio EVO e rosolare le fette di melanzana e zucchina per circa 2 minuti per lato, poi sistemarle sul fondo di una pirofila monoporzione.

Nella stessa padella, rosolare la cipolla e l'aglio per 3 minuti. Aggiungere i pomodori pelati, le lenticchie, l'aceto, il prezzemolo e l'origano. Cuocere per 10 minuti a fuoco medio-basso.

Versare il sugo di verdure e lenticchie sopra le melanzane e zucchine cotte.

In una ciotola, mescolare lo yogurt greco, la farina di mandorle, il tuorlo d'uovo, una grattugiata di noce moscata e pepe. Versare il composto sopra le verdure.

Spolverare con il parmigiano grattugiato e infornare a 190°C per 25 minuti, fino a doratura.
