Stacca le foglie di menta dal gambo e trasferiscile in un frullatore insieme alla scorza di lime grattugiata e al dolcificante. Frulla fino a ottenere una pasta aromatica fine.

Versa il succo di lime fresco in un pentolino a fuoco medio e porta a temperatura di circa 70°C, quindi aggiungi la gelatina stemperata in acqua fredda, mescolando dolcemente fino al completo scioglimento. Lascia raffreddare a temperatura ambiente per 10-15 minuti.

In una ciotola fredda, monta la panna fresca con una frusta elettrica fino a raggiungere consistenza morbida e voluminosa, senza farla diventare rigida. Trasferisci in frigorifero.
