Preriscaldare il forno a 180°C e preparare una teglia per 10 muffin con pirottini di carta oppure oliare leggermente gli stampini.

Triturare finemente gli amaretti con i mani o in un frullatore fino a ottenere una briciola grossolana.

In una ciotola grande, versare la ricotta scremata e mescolarla bene con una frusta per renderla cremosa e priva di grumi.

Aggiungere l'uovo intero e i 4 albumi alla ricotta, mescolando dolcemente fino a incorporare completamente.

Unire il cacao amaro in polvere, l'essenza di mandorla e il sale, amalgamando bene.

In una ciotola separata, combinare la farina d'avena, lo zucchero di canna, l'eritritolo, il lievito per dolci e la briciola di amaretti.

Versare la miscela secca nella miscela umida e mescolare delicatamente con una spatola fino a ottenere un impasto omogeneo, senza lavorarlo eccessivamente.

Distribuire il composto nei pirottini, riempiendo fino a ⅔ dell'altezza.

Infornare a 180°C per 22 minuti, fino a quando uno stecchino inserito al centro esce asciutto.

Lasciar raffreddare nella teglia per 5 minuti, quindi sformare su una gratella e servire tiepidi.
