Preriscaldare il forno a 180°C e foderare una teglia per muffin (12 fori) con pirottini di carta.

In una ciotola mescolare le carote grattugiate con il succo di limone e lasciare riposare 2 minuti: l'acidità preserverà il colore e amplierà il sapore.

In un'altra ciotola, versare le uova e montarle leggermente con una forchetta fino a ottenere una massa omogenea.

Aggiungere il miele e l'olio di cocco fuso alle uova, mescolare bene.
