Preriscaldare il forno a 180°C e preparare uno stampo per muffin, rivestendolo con pirottini di carta.

In una ciotola, unire la buccia di mela e la scorza di limone con la farina di avena e un pizzico di sale.

In un’altra ciotola, mescolare la bevanda di soia, lo yogurt greco, l'eritritolo e le proteine in polvere fino a ottenere un composto liscio.
