Method

Preriscaldare il forno a 180°C. Rivestire uno stampo da 8 muffin con pirottini di carta o ungere leggermente con olio.

In una padella antiaderente, scaldare 1 cucchiaio di olio a fuoco medio e rosolare lo scalogno tritato per 2 minuti fino a profumo; aggiungere i dadini di carota e cuocere 3 minuti.

Aggiungere i piselli, mescolare bene e cuocere per altri 2 minuti. Trasferire il composto in una ciotola e lasciare raffreddare leggermente.

In un'altra ciotola, sbattere le uova con il latte scremato, il sale, il pepe e la paprika fino a ottenere un composto omogeneo.

Aggiungere la farina di avena, il lievito, il Parmigiano reggiano grattugiato e il Provolone light grattugiato, mescolando con un cucchiaio di legno fino a incorporare tutti gli ingredienti.

Unire i dadini di prosciutto e il composto di verdure raffreddato all'impasto, mescolando delicatamente per non smontare.

Dividere l'impasto equamente tra i 8 pirottini, riempiendo ciascuno a circa 3/4.

Cuocere in forno a 180°C per 20-25 minuti, fino a quando uno stuzzicadenti inserito al centro esce pulito e la superficie è dorata.

Estrarre dal forno e lasciare riposare 5 minuti prima di sformare. Servire tiepidi o a temperatura ambiente.
