Method

Preparare il lievitino: scaldare 100 ml di acqua a 37°C, aggiungere 60 g di farina di segale e il lievito madre secco. Mescolare bene e trasferire in un vasetto chiuso. Lasciar maturare per 12-15 ore a temperatura ambiente (circa 24°C).

Versare in una ciotola grande l'acqua fredda rimanente, il latticello e il lievitino maturo. Mescolare delicatamente.

Aggiungere la farina di farro integrale, manitoba, la segale rimanente e il lievito di birra. Mescolare fino a ottenere un impasto ruvido. Coprire e riposare 15 minuti.

Aggiungere il sale e l'olio extravergine, impastare vigorosamente per 8-10 minuti fino a quando l'impasto diventa elastico e coesivo.

Posizionare l'impasto in una pentola di terracotta infarinata con farina di farro, chiudere il coperchio e lasciare fermentare a temperatura ambiente per 1-2 ore fino a raddoppio.

Preriscaldare il forno a 230°C in modalità statico per 15 minuti.

Infornare la pentola coperta a 230°C per 30 minuti.

Abbassare la temperatura a 200°C, rimuovere il coperchio con cautela e proseguire la cottura per altri 15 minuti fino a doratura dorata.

Estrarre la pentola dal forno, sformare il pane su una gratella e lasciar raffreddare completamente prima di affettare.
