Method

In una ciotola, sciogliere il lievito di birra con lo zucchero di cocco e l'acqua tiepida, poi lasciare riposare per 10 minuti.

In un'altra ciotola, unire le farine di grano saraceno e avena, poi aggiungere lo yogurt e l'olio extravergine di oliva.

Versare il composto di lievito nella ciotola con le farine e mescolare bene fino ad ottenere un impasto omogeneo.

Impastare energicamente per circa 5 minuti, fino a quando l'impasto risulta elastico.

Coprire la ciotola con un canovaccio umido e far lievitare in un luogo caldo per circa 1 ora, o fino al raddoppio del volume.

Rivestire uno stampo da plumcake con carta forno e trasferire l'impasto lievitato nello stampo.

Coprire nuovamente e far lievitare per altri 30 minuti.

Nel frattempo, preriscaldare il forno a 200°C.

Cuocere il pane per circa 30 minuti o fino a quando risulta dorato in superficie.
