Sciogli il lievito fresco nell'acqua tiepida, mescolando accuratamente fino a completo scioglimento.

In una ciotola, unisci la farina d'avena, le proteine in polvere e il sale, mescolando bene gli ingredienti secchi.

Versa il lievito sciolto nella ciotola e aggiungi l'olio d'oliva. Impasta fino a ottenere un composto liscio e omogeneo.

Forma una palla con l'impasto, ungila leggermente con un filo d'olio e coprila con un canovaccio. Lasciala lievitare in un luogo caldo per 45 minuti.

Una volta lievitato, modella l'impasto a forma di filone e posizionalo su una teglia rivestita con carta forno.

Cospargi la superficie con i semi di sesamo e lascia lievitare per ulteriori 15 minuti.
