Affetta la base del panettone a circa 2 cm di altezza e mettila da parte; capovolgi il panettone e scava una cavità centrale lasciando 2 cm di spessore attorno.

Tritare grossolanamente il cioccolato fondente a mano e tenerlo da parte.

Grattugia finemente la scorza di arancia in una ciotola; aggiungi lo zucchero di cocco, il caffè istantaneo e un pizzico di sale, mescola bene.

In un'altra ciotola, versa il mascarpone greco e i due albumi; monta con le fruste elettriche fino a ottenere una crema soffice e vellutata (circa 3-4 minuti).

Aggiungi alla crema montata la polvere proteica vaniglia mescolando delicatamente con una spatola dal basso verso l'alto.

Dividi la crema in tre parti uguali: nella prima incorpora il composto di caffè e scorza; nella seconda il cacao amaro; nella terza il cioccolato tritato. Mescola ogni porzione delicatamente.

Riempi il panettone scavato alternando strati: prima la crema al caffè, poi quella bianca, infine quella al cioccolato.

Copri con la base di panettone che avevi tagliato; avvolgi in pellicola trasparente e riposa in frigorifero per almeno 6 ore.

Sforna il panettone, togli la pellicola e affetta in otto porzioni uguali. Servi freddo.
