Cuoci le patate dolci a vapore per 25 minuti fino a renderle morbide, poi pelale e tagliuzzale mentre ancora tiepide.

In una ciotola mescola farina d'avena, proteine in polvere, lievito, sale, cannella e vaniglia.

In un'altra ciotola unisci uova, yogurt greco, miele e olio di cocco, mescola bene.

Incorpora gli ingredienti secchi nei liquidi, poi aggiungi le patate dolci e amalgama con cura fino a ottenere un impasto denso e omogeneo.

Lascia riposare l'impasto per 10 minuti in modo che la farina d'avena assorba i liquidi.

Con le mani unte, forma 12 panini rotondi e compatti di circa 70 g l'uno.

Disponi i panini su una teglia coperta di carta forno e lascia lievitare per 15 minuti a temperatura ambiente.

Cuoci in forno a 180°C per 20 minuti finché la superficie non risulta dorata e al tatto sono sodi.
