In una ciotola, mescolare il latte di mandorle tiepido con l'eritritolo e il lievito di birra secco fino a completo scioglimento.

Aggiungere la farina di avena, lo yogurt greco e il sale, quindi impastare fino a ottenere un composto liscio e omogeneo.

Trasferire l'impasto su un foglio di carta forno, formare una palla compatta e lasciarla riposare per 10 minuti a temperatura ambiente.

Spennellare la superficie con l'albume e cuocere in forno preriscaldato a 180°C per 15-20 minuti fino a doratura.
