Tritare finemente le mandorle pelate e mescolarle con l'eritritolo e 30 g di yogurt greco per formare la base croccante. Distribuire il composto in uno stampo monoporzione e far solidificare in freezer per 20 minuti.

Scaldare il latte di mandorla in un pentolino e infondere i fiori di lavanda per 5 minuti. Filtrare e far raffreddare.

Montare il resto dello yogurt greco (120 g) con l'eritritolo fino a ottenere una consistenza spumosa.
