Method

Versa la farina in una ciotola ampia e aggiungi il siero di latte in polvere, i semi di lino macinati e il sale: mescola bene con una frusta per distribuire uniformemente le proteine.

Taglia il burro chiarificato in piccoli dadini e aggiungili al composto; con le punte delle dita, stropiccia il burro nella farina fino a ottenere un impasto granuloso e sabbioso.

Versa l'acqua fredda poco alla volta, mescolando delicatamente con le dita fino a quando l'impasto inizia a compattarsi senza risultare appiccaticcio.

Trasferisci l'impasto su un piano di lavoro e, con i palmi delle mani, accorpalo in una palla compatta; poi appiattiscilo in un panetto dello spessore di circa 5 mm.

Avvolgi il panetto nella pellicola trasparente e riposa in frigorifero per almeno 30 minuti prima dell'uso; puoi conservarlo fino a 2 giorni oppure congelare per un mese.
