Tostate leggermente 20 g di noci in una padella a fuoco medio per 2-3 minuti, girandole spesso per evitare che brucino, poi tritatele finemente con un coltello o un mortaio e riponetele da parte.

In una ciotola, versate la ricotta fresca e la ricotta di capra, aggiungete l'olio extravergine di oliva e frullate con un frullatore a immersione fino a ottenere una crema liscia e omogenea (circa 20-30 secondi).

Tritate finemente l'erba cipollina e il basilico, poi incorporateli nella crema insieme a 20 g di noci tritate (quelle non tostate); regolate di sale e pepe.
