Lavare i peperoni, togliere i semi e il picciolo, quindi tagliarli a listarelle larghe circa 1 cm. Pelare la cipolla rossa e affettarla non troppo sottilmente.

In una padella antiaderente a fuoco medio-alto, versare l'olio e far scaldare per 30 secondi. Aggiungere i peperoni in un unico strato e lasciarli cuocere per 5-6 minuti senza mescolare, finché iniziano a dorarsi leggermente.

Mescolare bene e trasferire i peperoni su un piatto. Nella stessa padella, aggiungere le cipolle affettate e far cuocere a fuoco medio per 8-10 minuti, mescolando ogni 2 minuti, finché diventano morbide e leggermente caramellizzate ai bordi.

Tritare finemente lo spicchio d'aglio e aggiungerlo alle cipolle negli ultimi 30 secondi di cottura, insieme al timo fresco staccato dai rametti. Rimescolare bene.

Riunire peperoni e cipolle in padella, aggiungere l'origano, il sale e il pepe nero. Cuocere insieme per 1-2 minuti a fuoco medio, mescolando delicatamente. Spegnere il fuoco, aggiungere l'aceto balsamico e mescolare.

Servire caldo come contorno leggero, in insalata fredda, o come base per piatti proteici.
