In una ciotola, monta gli albumi a neve ferma e metti da parte.

In un'altra ciotola, sbatti i tuorli con l'eritritolo fino a ottenere un composto chiaro e spumoso. Aggiungi l'acqua e l'estratto di vaniglia.

Setaccia insieme la farina d'avena, il cacao e il lievito. Incorpora gli ingredienti secchi al composto di tuorli, mescolando delicatamente.

Srotola il dolce e spalma il ripieno su tutta la superficie. Arrotola nuovamente senza il canovaccio.

Sciogli il cioccolato rimanente e versalo sopra il rotolo. Lascia raffreddare in frigo per almeno 30 minuti prima di servire.
