Method

Mescolare in una ciotola 40g di yogurt greco 0%, 15g di mandorle macinate finemente, 5g di eritritolo e un pizzico di sale; riservare.

Disporre la pera sbucciata, privata del torsolo e tagliata a spicchi in una piccola padella antiaderente (20cm), cospargere con 2g di burro, 3g di eritritolo, zenzero e noce moscata; cuocere a fuoco medio per 8-10 minuti finché la pera non diventa tenera e il caramello acquisisce colore dorato.

Aggiungere 10ml di bourbon (facoltativo) e lasciar evaporare per 1 minuto.

Distribuire uniformemente il composto di mandorle-yogurt sulla superficie.

Passare in forno a 180°C per 6-7 minuti finché la copertura non diventa leggermente dorata e croccante.

Lasciar riposare 3-5 minuti e servire tiepida.
